Irish Apple Crumble (and ouch!)

I am continuing in my series on Autumn, sharing one of my favourite autumn recipes, apple crumble. However, in our family, it is welcome all year round. It is quick and easy, and I’m not sure why I don’t make it more often.

While making dinner on Tuesday evening, on a spur of the moment, my middle daughter and I decided to make the most of the bag of bramley cooking apples and make a quick crumble (or two).

Here is the recipe:

Irish Apple Crumble

For the crumble

300g/10½oz plain flour sieved pinch of salt
175g/6oz brown sugar
200g/7oz butter cubed at room temperature
Knob of butter for greasing

For the filling

This is enough apple for double the quantity (2 crumbles)

450g/1lb cooking apples peeled, cored and cut into pieces
50g/2oz brown sugar
1 tbsp plain flour
1 pinch of ground cinnamon (we usually don’t add it)
optional – a few tablespoons of porridge oats
It easy – butter the pie dish, and add the chopped apple and sprinkle with the sugar and flour
Make the crumble topping – I usually just  blitz all the ingredients in a food processor, but if you want to get “stuck in” you can use the “rubbing in” method (which always reminds me of Home Economics O’level!)  Mix the sugar and flour in a large bow, and gradually add in a few cubes of butter at a time, rubbing them into the mixture with your finger tips until it all resembles breadcrumbs.
Sprinke the topping over the fruit.
Bake in oven for 40 minutes (max – maybe less) at 180 C (350F)
Serve with warm custard and enjoy!

On to the “Ouch” in the title ….. this week I have had the joy of suffering from a nasty tooth abscess. The dentist has been wonderful, but the pain has been incredible, and half my face has swollen up like a chipmunk!
If you are of a delicate disposition you may not wish to read on ……
as well as antibiotics and pain killers, my instructions have been to “suck out the blood and pus” and today my gum was lanced with a scalpel ….. double ouch!
Hope the swelling goes down soon, and at least the pain has eased, as tomorrow is party, party, party –
  • I am taking a kids birthday jewellery making party in the morning
  • my son is having his 8th birthday party AT HOME tomorrow afternoon (about 15 kids and a magician)
  • in the evening our neighbour is having her 60th birthday party!!!

  1. Ouch! So Sorry for you! Hope you feel better soon so you can enjoy the Party weekend. Sounds great with the magician. Wow 15 kids don’t trust myself to organize and survive this.

  2. Oh yes – easy peasy, and you can make the topping in the food processor if you want – just whizz it for a minute or two, cover the fruit and bake 🙂 Let me know if you make it.

  3. Ok so apple,crisp is my favorite dessert more so then chocolate – I make it at least once a week at home when it cools down except the oatmeal is part of the topping and I use brown sugar lots of cinnamon and nutmeg it’s so yummy I will have to make you some 🙂
