{Really} Easy Peppermint Bark

I made Peppermint Bark for the first time today, and can’t believe

  • how easy it is to make
  • how delicious it is
  • how pretty and Christmas-y it looks
  • how come I haven’t made it before now!

Ingredients

dark chocolate – 2 large bars (preferably “good” chocolate – not baking chocolate)
white chocolate –  2 large bars (preferably “good” chocolate – not baking chocolate)
peppermint essence
8 candy canes

(There are a few variations, but this is what I used and it worked for me!)

Melt dark chocolate
Add a teaspoon of peppermint essence
Spread over a baking tray lined with baking parchment
Allow to cool/chill (in fridge or freezer if you are impatient like me!)

Bash the candy canes (inside a plastic bag to reduce the mess)

Melt white chocolate
Add a teaspoon of peppermint essence
Add about half of the bashed candy canes to the melted white chocolate

Spread the white chocolate mixture over the dark chocolate

Add the rest of the candy cane bits

Chill

Remove from the baking parchment and break up – I didn’t cut it neatly, but did use a knife to encourage some of the breaking.

Display on a pretty Christmas plate and enjoy

    Could not be simpler than that! Looks delicious. I blended a rose hip tea today, tomorrow bottling my own vanilla scented sugar, the latter is easy peasy too and makes a wonderful gift!

    Thought i’d sneak a visit in, down to the wire here!

  3. I have yet to make peppermint park. My favorite Christmas baking is making cinnamon bread. I see you’re in Northern Ireland; my mum is from Northern Ireland, and I have been over there 11 times. Currently, my husband and I live near Washington DC.
